Step into the world of Head Chef Nicolas Pedemonte with Fuego & Sip
To celebrate its 4th birthday, Âpé is turning up the heat this November with Fuego & Sip, a one-night dinner built around fire, smoke and the Nikkei flavours that shape chef Nic Pedemonte’s cooking.
On Wednesday, 25 November, Fuego & Sip will take over Âpé in Honeysuckle with a multi-course dinner, welcome drink and a menu left entirely in Nic’s hands.
For Nic, cooking over fire started long before Âpé. Growing up in Chile, he learned alongside his mother and grandmother, helping prepare family meals and charcoal barbecues.

Those early influences later met the techniques he picked up in the kitchens of Santiago and during his time at Nagisa, helping shape his own take on Nikkei cooking.
Throughout the evening, the menu will move between the freshness of the sea and the richness of the land, with ingredients cooked over coals and layered with smoke and char. Standout dishes include Wagyu MBS 6–7 skirt with king mushroom, lentejas and chorizo cream.

Guests will receive a welcome drink on arrival, with a special selection of Chilean cocktails and wines also available to purchase throughout the evening.
With waterfront views, fire-led cooking and a menu revealed as the night unfolds, this one is designed for those happy to hand over the reins and let the chef do the choosing.
