Tradition, charm and style combine as new publicans breathe fresh life into the Greenroof hotel

If you’ve visited The Greenroof Hotel in Hamilton recently, you’ll likely have had the pleasure of meeting Dani and Brent Rowlands. Taking over as publicans in early 2025, they’re no strangers to hospitality, having successfully run a wine bar, restaurant and cafe in Mudgee.

Dani and Brent continue to bring their fresh energy and vision to Hamilton’s Greenroof Hotel, and a traditional pub atmopshere that's hard to find.

Dani and Brent Rowlands

Having spent a lot of time living in Newcastle over the years, Dani and Brent consider it to be their second home. Brent has fond memories of holidays at his grandparents’ house at the bay and working at Merewether’s much-loved Burwood Inn.

“Moving from a country town to a place like Newcastle is an easier transition than moving to a big city like Sydney,” says Dani.

“We love the mix of city and surf here and the laidback lifestyle, so it really is the perfect spot.”

Brent explained he’d had his eye on The Greenroof, and was fully aware that it had always been more than just a spot to grab a drink. Rather, it was one of those pubs that feels more like home; somewhere friends, neighbours and visitors get together to share stories and have a laugh.

Dani and Brent wanted to keep this community spirit going, and since taking ownership, the dynamic duo have wasted no time in putting their stamp on the place.

They’ve adapted the interior so it’s more open-plan, mounted additional big screens for the sports fans and relocated the TAB.

“For us, it’s not about shiny renovations,” says Brent.

“It’s about creating a warm, welcoming atmosphere that makes people want to linger and return."

“Our goal is to be the pub that suits all walks of life, while preserving its traditional character and charm.”

It’s not just the atmosphere that’s evolving in the Greenroof; the menu has been given a refresh, too.

New head chef Isaac Hense, formerly of Alfies in New Lambton, is cooking up pub favourites like schnitzels and steaks, as well as weekly specials and signature dishes.

Issac has really elevated our menu, putting his spin on the classics,” says Dani.

“He’s very passionate and you can see the Italian influence in a lot of his dishes, especially the locally made, fresh pastas.”

Complementing the new menus are a quality wine list, a revamped cocktail selection and an array of craft beers. You can even drink Guinness fresh from the tap, which isn’t always easy to find in Newcastle.

“We've introduced new signature cocktails along with the classics and updated the wine list so it’s better suited to our new dining crowd,” says Brent.

But it’s not all change. Music remains a cornerstone of the Greenroof with a lineup of events on the calendar, with soloists every weekend.

“We have live music in the front bar on Friday and Saturday nights and are hosting a big live music event in the car park in November,” says Dani.

The key message from this passionate pair?

“There aren’t many pubs that are operated by the owners anymore, a lot have been bought out by big groups. We’re proud to be hands-on with our team.”
